We travelled to New York to cook at what might be the most important burger restaurant in America — Hamburger America, run by George Motz, the man who has spent his entire career documenting the history of the American burger. George knows more about burgers than almost anyone alive. He's smashed over a quarter of a million patties on the same griddle. He uses a bricklayer's trowel because that's what every great smash burger cook used in the 1940s. He calls his griddle a "live hamburger museum." We thought we knew how to cook a burger. We had no idea.
