INSTANT POT RICE PUDDING - Old Fashioned Recipe/New Cooking Technic

Instant Pot Rice Pudding 1 cup rice - (don't rinse the rice) 1 1/2 cups water 2 cups whole milk, divided* 1/2 cup sugar 2 eggs 1/2 teaspoon vanilla extract 3/4 cup raisins Put the rice, water and raisins in the Instant Pot. You can add a cinnamon stick too if you desire. Set the instant pot on high pressure for 3 minutes. Once the cook time has elapsed allow the pot to naturally release for 10 minutes and then do a quick release. Switch the pot to Saute and add 1 1/2 cups of milk and the sugar. Mix well. To a small bowl add the eggs and whisk. Add the remaining 1/2 cup of milk and 1/2 tsp of vanilla. Stir the egg mixture into the rice mixture in the pot and continue cooking until the pot begins to boil. Stir continuously to avoid sticking to the bottom of the pot. Add a sprinkle of cinnamon if you haven't already added a cinnamon stick at the beginning. Remove from heat and let cool. You can serve this with whipped cream or just cream.
