Discover how to make your own high-quality, long-lasting sausage in a jar instead of buying it. In this video, I'll show you the complete method for proper sterilization and tyndallization, so your homemade sausage can be safely stored for up to a year. I'll explain how to prepare the meat, add spices, use pork rind as a natural gelatin source, and sterilize the jars correctly. ‼️Attention! Before you begin preserving meat, inform yourself about all the risks involved. The safest method is the use of an autoclave. Tyndallization is the process of repeatedly heating liquids two to five times at 24-hour intervals. During this time, bacterial spores that survive at 100°C germinate and are killed upon subsequent heating. First, we bring the jars to a boil in a covered pot and sterilize them for 3 hours from the moment they come to a boil. We switch off the power and take the glasses out of the pot. After 24 hours, we place them back in the pot, add water, bring it to a boil, and sterilize for 2 hours from the moment it boils. This is the second sterilization. We switch off the power and take the glasses out of the pot. After 24 hours, we place them back in the pot, add water, bring it to a boil, and sterilize for one hour from the moment it boils. This is the third sterilization. Then let the jars cool to room temperature.
