❤I encourage you to subscribe to my channel to stay up to date with all the recipes❤ ❤Thank you for being here❤ 250 ml glass 20x30 cm baking tray Ingredients: Sponge cake: 200 g fresh spinach Heat, stirring, for about 2 minutes, until wilted Place the spinach in a tall container and blend until smooth 2 cups wheat flour 2 teaspoons baking powder 1 tablespoon potato flour Sift and set aside 3 whole eggs at room temperature 1 cup sugar Beat until white, fluffy 3/4 cup oil Add in batches, constantly mixing Add chopped spinach Add previously prepared dry ingredients and mix briefly, just until combined Pour the dough into a 20x30 cm baking tin Bake for about 35 minutes (until a toothpick comes out dry) without convection, top-bottom heater in an oven preheated to 160 degrees Jelly: 600 ml boiling water 2 strawberry jellies Stir until jelly is completely dissolved. Set aside to cool. Leave the sponge cake on a wire rack to cool completely I gently cut off all the sides and cut off the top and bottom so that the sponge cake has a nice color Cut the cake into 2 layers (the bottom layer is 2/3 thick) Set 1/3 aside for sprinkling the top of the cake Cream: 250 g mascarpone cheese 500 ml heavy cream (2 cups) Whip large vanilla sugar (40 g) 1 tablespoon icing sugar Whip Place the thicker layer of the cake in the tin and soak it in lemon water Pour half of the cream onto the sponge cake Add 400 g strawberries (frozen in my case) to the cooled jelly Pour the thickening jelly with strawberries onto the cream (jelly with frozen fruit sets quickly) Pour the rest of the cream Crumble the remaining sponge cake and sprinkle over the top of the cake.
