For the filling, mix the ricotta with the sugar, egg and cinnamon in a bowl and mix until creamy. Peel and cut the apples into small pieces, season them with the orange juice. Roll out the pastry and line a 22cm springform cake tin with the pastry, pour in the ricotta cream and add the apples. Bake at 180° for 35-40 minutes. LEMON BROWNIES RECIPE: 80 g of butter at room temperature 130 g of sugar grated peel of one lemon juice of 1 lemon 100 g 00 flour half a teaspoon of baking powder 2 eggs icing sugar to decorate METHOD: Work the butter with the sugar, add one egg at a time, the lemon juice, mix, finally the flour with the yeast. Mix everything, pour into a 22cm x 22cm pan, bake at 180° for 15-20 minutes. Once cooled, cut into squares and sprinkle with icing sugar. RECIPE FOR BEET AND BAKED POTATOES GRATIN: 800 g beets 600 g potatoes 200g scamorza (provola) extra virgin olive oil salt grated parmesan to taste METHOD: Wash and cut the chard into pieces, blanch in boiling salted water for a few minutes, drain and set aside. Peel and cut the potatoes into not too thin slices, boil them in the same pan as the chard for 3 minutes and drain them. Grease a baking tray with a drizzle of oil, make a layer of potatoes and chard, spread the grated cheese and slices of scamorza (or provola) on top.
