"Ghee is the foundation of Ayurvedic cuisine. It's clarified butter, meaning it has been heated and then filtered to remove anything that can't withstand cooking (lactose, casein), as well as its moisture. According to Ayurveda, ghee is the best fat for cooking because it's a saturated fat, which therefore remains stable when heated. Unsaturated fats (cold-pressed oils, for example) are a nectar consumed raw, but are not meant for cooking. Coconut oil is an exception and withstands cooking better. Properly filtered ghee keeps indefinitely at room temperature; it solidifies upon cooling. It's said that ghee that's a hundred years old possesses remarkable healing properties! You can find ghee in health food stores, but it's quite expensive and often has a rancid odor...
