Ingredients for one large filled yeast flatbread: For the dough: 🔺 150 ml warm milk 🔺 1 tbsp sugar 🔺 5 g dry yeast 🔺 1 egg 🔺 280–300 g flour 🔺 1/2 tsp salt 🔺 30 g butter 🔺 a little vegetable oil for the pan For the filling: 🔺 400 g potatoes 🔺 20 g butter 🔺 1/2 tsp salt 🔺 1/3 tsp black pepper 🔺 150 g mozzarella For brushing: 🔺 1 egg yolk 🔺 1 tsp milk 🔺 poppy seeds or sesame seeds for sprinkling After baking: 🔺 30 g melted butter 🔺 a small bunch of parsley Preparation: Stir the warm milk with sugar and dry yeast. Add the egg and flour, then bring the dough together. The exact amount of flour may vary slightly, so pay attention to the consistency. Work in the salt and butter, then knead the dough well. Place it in a lightly oiled pan and let it rise in a warm spot for 1 hour. For the filling, boil the potatoes until soft, mash them with butter, salt, and pepper, then let cool. Roll out the risen dough, place the mashed potatoes and mozzarella in the center, seal the edges tightly, and carefully roll out the flatbread. Place it on a baking sheet, cover, and let rest for 20 minutes. Brush with egg yolk and milk, cut a pattern on top, and sprinkle with poppy or sesame seeds if desired. Bake at 180 °C (356 °F) for about 25–30 minutes until golden brown. Immediately after baking, brush with melted butter and parsley. This makes the flatbread especially flavorful and soft.
