I will share how to use a sourdough starter to make sourdough mantou (steam bun). I follow this video as a reference    • 蒸馒头 松软香甜  回味无穷 只要三种原料   to create my own version. Ingredients: Sourdough starter 50 g Plain or strong flours 150 g (starter x 3) Water 75 g (flours x 0.5) Sugar 50 g (starter x 1) Additional flours 30 g (depends) Steps: 1. Mix the starter, water, flour and sugar 2. Wait 30 mins and roughly knead to smooth. Prove at room temperature for 3 hours. Put into fridge overnight. The next day, prove at room temperature for another 3 hours. (If you do not have time, you can skip the overnight proof in the fridge.) 3. Divide into three. Knead for 5 mins to firm and shape. 4. Prove with the lid for one hour. Then, prove without the lid for another hour. 5. After the water is boiling, steam for 20 minutes at medium heat. 20 Minutes later.
