Simple Chinese Comfort Noodle Soup in Minutes (Yang Chun Mian) Yang Chun Mian (Noodles) are so plain but also delicious, warming and comforting. The traditional recipe calls for lard but I use sesame oil instead. Yang Chun means the 10th month of lunar calendar, when the weather is warm and comfortable. So are Yang Chun Noodles. Ingredients: 3 oz Chinese fresh or dry noodles (or ramen) 2 green onions, chopped thinly For the broth base: salt 1/2 of the green onions sesame oil sugar white pepper chicken bouillon (or mushroom seasoning) light soy sauce dark soy sauce Written recipe for Chinese Noodle Soup (Yang Chun Mian): 1. Bring a pot of water to a rolling boil. Add the noodles and cook until al dente. 2. About 1 minute before the noodles are done, add a small amount of cold water to the pot to stabilize the boil and improve noodle texture. 3. Transfer the noodles to serving bowls. Ladle some of the hot noodle cooking water over the noodles to form the soup base. 4. Garnish with sliced green onions and drizzle lightly with sesame oil. Serve!
