Beet carpaccio (2 serve plates) Ingredients: 2-3 medium beets 2 tablespoons olive oil 2-4 teaspoons balsamic vinegar 2 teaspoons honey or maple syrup salt black pepper chopped pistachios 100g goat cheese Preparation: 1. Fill a pot with water and bring to a boil. Cook the beets in a boil water with the peel for about 20 minutes. 2.Peel the beets and slice them thinly. 3. Place the slices on a flat plate and sprinkle with olive oil, balsamic vinegar, honey or maple syrup salt and pepper. 4. Crumble on top chopped pistachios and goat cheese and serve! yes cook the beets for only 20 min it’s supposed to be a little bit raw. But don’t worry you cut for very tin slices.
