Garlic Butter Fried Rice Better Than Takeout

Ingredients • 3 eggs • 350g cooked rice (preferably day-old rice) • 50g garlic (half sliced, half minced) • 30g chopped green onions • 15g butter • 1/8 tsp salt • 1/8 tsp black pepper • 1/2 tsp light soy sauce • 1/8 tsp(A few drops)dark soy sauce • Neutral oil for cooking ⸻ Instructions 1. Heat a pan over medium heat and add a little neutral oil. 2. Pour in the beaten eggs and scramble until just set. Remove and set aside. 3. Add 15g butter to the pan and let it melt. 4. Reduce to low heat. Add the sliced garlic and cook slowly until golden. 5. Stir in the minced garlic and sauté briefly until fragrant. 6. Turn the heat back to medium. Add the 350g rice and the cooked eggs. Break up the rice and toss well. 7. Season with salt, black pepper, light soy sauce, and a few drops of dark soy for color. Stir to combine. 8. Add the chopped green onions and toss for about 10–15 seconds, just until aromatic. 9. Serve immediately.
