Ingredients 3 eggs 300g leftover rice (about 2 cups) 70g carrots, diced (about ½ cup) 70g corn (about ½ cup) 70g peas (about ½ cup) 20g green onions, chopped (about 2 tbsp) ⸻ Instructions • Bring a pot of water to a boil. Add the corn, peas, and carrots. Cook until tender, then drain well. • Heat a pan over medium heat and add some oil. Pour in the beaten eggs and quickly scramble until just set. • Add the rice and break it up, stirring until evenly heated. • Season with 1/8 tsp salt and 1/8 tsp white pepper. Stir well. • Add the cooked vegetables and mix everything together. • Toss in the chopped green onions and give it a final stir. • Serve and enjoy!
