About What You’d Expect || Sweet Potato & Silver Queen Harvest || September 2025

Today we pulled our first sweet potatoes of the season — they did pretty well considering the wet year we’ve had. We decided to leave some in the ground a little longer, just to see how they do. We also harvested our raised bed Silver Queen sweet corn that had been knocked over in a recent storm. Even with the rough weather, it turned into the most delicious creamed corn we’ve ever made. And because nothing goes to waste here, Andy and I cut down the corn stalks at the end of the day to feed to the cows. 💚 To everyone who continues to watch, comment, and share in these moments with us — thank you. You are the reason we keep filming our Appalachian homestead life, and we’re so grateful to have you here.
