Ranchi Famous Sakhuwa Mutton Chawal (मीट भात) - Step by Step Making & Tasting
In Ranchi, there is a huge craze for mutton chawal. You will find many places serving it, but the Dhurwa mutton chawal is one of the most famous. This place has been around for almost 30 years. In this episode, we show you the full process and recipe. We met Aditya, who shared their journey. They started small, preparing just 2 kg of mutton at home and bringing it here to sell. Slowly, people started loving it. Over time, it grew into a big and popular stall. The spice mix was originally prepared by his grandmother, and the same recipe is still followed today. Now, they prepare around 150 kg of mutton every day. It takes about 2 to 3 hours to cook. The place is so popular that even close associates of Mahendra Singh Dhoni are regulars here. The mutton chawal has also been taken for Dhoni’s birthday celebrations. Then begins the cooking process. Mustard oil is heated, and cumin seeds, bay leaves, and dried red chillies are added. Onions go in next. Then come the mutton chunks, including parts like liver, kidney, and spleen. Spices like turmeric, garlic and green chilli paste, red chilli powder, coriander seed paste, black pepper, cumin, and ginger paste are added. Mutton fat is also used for richness. Then their special mutton masala, kasuri methi, and garam masala are mixed in. Finally, a ghee tempering with cumin seeds and dried red chillies is added on top. At the end, we sat down with Anurag and enjoyed this comforting meal. It is served with simple rice and salad. The taste feels homely, yet the flavours are rich,robust and deeply satisfying.
