TGI Friday’s potato skins (copycat)

#plated #potatoskins Here is a recipe for copycat potato skins, TGI Friday’s. We personally thought they turned out better than theirs but thats neither here nor there. Here’s the recipe. Ingredients: 6 Medium Russet Potatoes 1 tbsp. Olive oil 2 tbsps. Melted butter 1 cup sharp cheddar cheese, shredded 1/2 cup mozzarella cheese, shredded 1 1/2 cup bacon, crumbled Salt and pepper Sour cream (optional) 2 green onions, thinly sliced Directions 1- Preheat oven to 425F 2- Pierce, scrubbed clean and dried potatoes, on each side with a fork 3- rub potatoes with oil and season with salt and pepper to taste 4- Bake on a foil or parchment paper lined baking sheet for 1 hour and allow to cool after 5- Set oven to 375F 6- Cut each potato lengthwise and scoop out most of the middle from each potato. Leave about 1/4 inch in the Potato skin. (Save the scooped out potato for another dish) 7- Melt the butter and brush the inside of each potato skin.
