Cut the tomatoes, eggplants, and zucchinis with a mandoline slicer into 2mm slices. (tip. Put aside the leftover veggie pieces, whose cross sections are too small.) 2. Slice the garlics and julienne the onions. 3. Cut the leftover veggie pieces and 2 tomatoes, which are for the sauce, into dices. 4. After melting some butter in a heated pan, add the veggie dices and stir-fry them withsalt and pepper. Once the veggie pieces are half-softened, add the tomato dices, tomato sauce, and waterto it, and turn to a low simmer for 10 minutes, with the lid on, to make the sauce. 5. Arrange alternating slices of eggplant, zucchini, and tomato so that they are a spiralingarray of overlapping vegetables, covering the sauce. 6. Sprinkle salt and pepper over the veggies and drizzle the mixture of chopped parsley andolive oil on top. 7. Bake it in the preheated oven at 180°C for 30~35 minutes.
