Pour in the milk and stir. Gradually add the flour, whisking constantly to avoid lumps. The dough should be runny (like for regular pancakes). Finally, cook the dough: pour in boiling water in a thin stream, stirring vigorously. Check the consistency – if the batter seems too runny, add a little more flour. It should spread freely in the pan, but not be watery. Fry in a well-heated, oiled frying pan. Blini Fillings 1. Chicken with Mushrooms Ingredients: Chicken fillet - 300 g Mushrooms (champignons or wild mushrooms) - 200 g Onion - 1 Sour cream - 2-3 tablespoons Salt, pepper, and dried garlic – to taste Braided cheese (smoked or classic) – for fixing Preparation: Finely chop the onion and mushrooms. Fry in a frying pan until the liquid has completely evaporated. Add the diced chicken and fry until golden brown. Finally, add the sour cream, salt, pepper, and garlic. Heat everything together for a couple of minutes – the filling is ready. Place it in the center of the pancake, gather the edges into a pouch, and tie with cheese string. Serve hot! 2. Nut Filling Ingredients: Walnuts - 150 g Sugar - to taste (about 3-4 tablespoons) Eggs - 2 pcs. Directions: Crush the nuts into crumbs and mix with the sugar. Roll this filling into the finished pancakes like an envelope or tube. In a separate bowl, beat the eggs and sugar. Dip each pancake in the egg mixture and fry in butter until golden and crispy.
