Cutting size: 15cm in diameter, 6 cm in height Ingredients: -Caramel: granulated sugar 60g, water 20g -Pudding: milk 500g, granulated sugar(a) 30g, whipping cream 50ml, vanilla bean paste 5g, whole egg 4, egg yolk 3, granulated sugar(b) 60g How to make: 1.To make caramel, heat 60g granulated sugar and 20g water over medium low heat until become caramel color, then pour into the bottom of the mold and spread it evenly, let it cool. 2.Heat 250g milk and 30g granulated sugar over medium low heat,stir and bring to a boil, cover with a lid and let sit for 5mins. 3.Add 250g milk, 50ml whipping cream and 5g vanilla bean paste and stir well. 4.Add 4 whole eggs and 3 egg yolks, beat until well mixed. 5.Add 60g granulated sugar and stir well. 6.Pour the milk mixture into the egg mixture, after well combined, sift 1-2 times, then pour into the mold, use a bamboo stick to pop the bubbles. 7.Place 2 sheets of paper towel in a deep baking pan, put the mold on top, then pour 50°C warm water into the pan about 1.5-2cm deep. 8.Preheat the oven to 140°C/284°F and bake for 15 mins, then reduce to 130°C/266°F and bake for 60-65 mins. Once baked, chill for 4-5 hours or overnight. 9.Use a spoon to gently press around the edges of the pudding to separate it from the mold. Then invert it on a plate and give it a few gentle shakes to release the pudding. Welcome!
