I wanted to pay homage to him with the recipe for TRIPPA ALLA ROMANANA, another icon of the capital. I smile more than once when I think of him. I was lucky enough to see the film in preview and had a blast, as always, appreciating its comedy. The day after tomorrow, I'll be back in the front row to see it again. 🙂 In one scene of the film, Marco Giallini cooks and serves an excellent and abundant Roman-style tripe. I like to think that Gigi, Marco, and the entire cast and crew even ate it at the end! 😂 It looked good! But can Rome and Roman culture really be summed up with the recipe for Roman-style tripe in memory of Gigi Proietti? I don't think so, because as the good Gigi himself said: "So Rome is a synthesis of what? Something...
