INGREDIENTS FOR THE SPONGE: 350g grated raw carrots = about 3 carrots 2 1/2 cups all-purpose flour = 350g = 17.5 tablespoons 4 eggs 1 1/2 cups sugar = 330g = 18 tablespoons 1/2 cup vegetable oil = 125ml = 11 tablespoons 1/2 cup milk = 125ml = 11 tablespoons 1 teaspoon vanilla extract 1 tablespoon baking powder = 20g 1/2 teaspoon salt 1 teaspoon ground cinnamon OPTIONAL: 1 cup chopped walnuts = 120g Candied fruit to taste Chocolate chips to taste 1 greased and floured 22cm diameter cake pan FROSTING: 300g cream cheese (Philadelphia type) 1 cup powdered sugar (powdered) = 160g = 11 tablespoons ½ teaspoon of vanilla essence Decoration with nuts, candied fruit, and chocolate chips. PREPARATION: In a bowl, sift the flour with the cinnamon, salt, and baking powder. Set aside. Beat the eggs with the sugar until a whitish cream forms and doubles in size. Add the oil and vanilla, continuing to beat until a smooth cream forms. Begin adding the flour to the mixture, alternating with the milk, and beat until smooth. Add the grated carrot and chopped walnuts and mix by hand with a paddle. Place the mixture in the mold and bake at 180°C for 45 to 60 minutes, or until a toothpick inserted into the mold comes out clean. Remove from the oven and let cool before removing from the mold. PREPARATION OF THE CREAM CHEESE CREAM: In a bowl, mix all the ingredients with a hand mixer.
