INGREDIENTS: FOR THE CAKE BATTER: 2 cups all-purpose flour = 280g = 14 tablespoons 1 teaspoon ground cinnamon 1/2 teaspoon salt 1 tablespoon baking powder = approximately 20g 1 teaspoon baking soda 1 cup vegetable oil = 250ml = 16 tablespoons 4 eggs 1 1/2 cups sugar = 330g = 18 tablespoons 350g raw, peeled, grated carrots 1 greased and floured 22cm diameter cake pan. FOR THE FROSTING: 300g cream cheese 200g powdered sugar = 1 1/2 cups = 16 tablespoons PREPARATION: Sift the flour and mix with the baking powder, baking soda, cinnamon, and salt. Set aside. Preheat the oven to 180°C (350°F). Mix the oil, eggs, and sugar and beat well. Add the sifted flour and mix, then finally the grated carrots. Fold everything together well. Bake at 180°C (350°F) for approximately 45 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven, let cool, and unmold. CREAM: Mix the cream cheese with the sugar and beat well until smooth. Cut the cake in half horizontally and fill with the cream cheese frosting.
