Perfect for weeknight dinners or special occasions. The crumb coating gives the chicken the most delicious crunch without frying. Ingredients: • 1 cup fine cornflake crumbs (or pretzel crumbs) • 1 cup crushed crackers (Ritz work great) • 1 tsp salt • ½ tsp garlic powder • ½ tsp smoked paprika • ½ tsp Cajun seasoning • ½ tsp baking powder • ¼ tsp black pepper • ¾ cup (1 ½ sticks) butter, melted • 8 chicken drumsticks (skin on) Instructions: 1. Preheat oven to 425°F and place the rack in the middle. Line a baking sheet with foil and set a baking rack on top. 2. Mix the crumbs, crushed crackers, salt, garlic powder, smoked paprika, Cajun seasoning, baking powder, and pepper. 3. Melt the butter in a separate bowl. 4. Dip each drumstick in the melted butter, then roll in the crumb mixture. 5. Place on the rack and lightly spray with oil. 6. Before baking, drizzle any leftover melted butter over the drumsticks. 7. Bake for 25 minutes, flip, then bake another 15–20 minutes until golden and cooked through (internal temp 170°F). Visit our NEW Home online!
