Mandarin Sour Cream Cake This creamy mandarin sour cream cake is once again a true classic. A simple recipe that you can easily prepare the day before. The whole thing tastes even better when left to stand and is also a bit more stable. A fantastic combination of an extremely creamy pudding sour cream mixture, a delicate shortcrust pastry, and the fruity, finest tangerine flavor. It's fruity, light, and delicious. Have fun making it! ------------------------------------------------------------------------------------------ Ingredients for the shortcrust pastry: 150g flour 65g butter (softened) 65g sugar 1 tsp. Baking powder (level tsp.) 1 medium egg ------------------------------------------------- Ingredients for the filling: 500ml milk 2 packets of vanilla pudding powder 150g sugar 3 cups of sour cream (600g) 1 can of mandarin oranges ----------------------------------------------------- Ingredients for the glaze: 250ml mandarin orange juice (add water if necessary) 1 packet of cake glaze (clear) For the springform pan (Ø 26 cm): A little fat Preparation: 1. Preheat oven to 160°C (fan/convection oven). 2. First, drain the mandarin oranges in a sieve, catching the juice. 3. Line the springform pan (Ø 26 cm) with parchment paper, lightly grease, and flour. 4. For the shortcrust pastry, place all ingredients in a mixing bowl and knead briefly with a food processor or a hand mixer (dough hook) until all ingredients are combined. 5. Place the dough in the prepared springform pan and flatten from the center outwards to the edge. 6. Using your fingertips, press the dough up from the edge to form a rim. 7. Place the springform pan with the shortcrust pastry in the freezer. 8. Meanwhile, make the pudding. 9. Mix the sugar with the pudding mix and stir in a little milk. Bring the remaining milk to a boil and add the pudding mix. Let it boil for about one minute, then remove from the heat. Let it cool slightly, stirring several times to prevent a skin from forming on the pudding. 10. Pour the pudding into a mixing bowl and briefly beat with a hand mixer. Add the sour cream and stir in as well. 11. Remove the springform pan with the shortcrust pastry from the freezer. 12. Pour the pudding and sour cream mixture onto the pastry base and smooth it out. 13. Arrange the drained mandarin orange slices in a circle over the cream. 14. Bake the cake in the preheated oven at 160°C (convection oven) for approximately 50-60 minutes, until the surface is slightly browned. 15. Let the cake cool in the pan. 16. Meanwhile, prepare the glaze. 17. Add the mandarin orange juice and water to make 250ml of liquid. Pour the liquid into a saucepan and dissolve the contents of the glaze packet with a whisk. 18. Bring the liquid to a boil, stirring constantly, and simmer briefly. 19. Let the glaze cool for a good 1 minute. 20. Now gradually spread the glaze evenly, starting from the center. 21. Let the cake cool completely. 22. It's best to refrigerate overnight for a firmer cut. 23. Use a knife to loosen the edge and open the springform pan.
