Simit Helvası (Semolina) with Coconut Sugar & Pine Nuts

Delicious Simit Helva made with coconut sugar and pine nuts giving it a unique taste and beautiful brown colour. Try it, you won't be disappointed! Ingredients: 270g semolina 175g coconut sugar 95g caster sugar 650ml water 40g coconut oil 100g pine nuts 1 tsp ground cinnamon drop of almond essence squeeze of lemon Method: Make the syrup with 650mls water in a saucepan with the coconut sugar, caster sugar and squeeze of lemon. Bring to the boil then simmer until thickens into syrup. In another saucepan, melt the coconut oil and brown the pine nuts. After 5 mins, pour in the semolina and stir continuously for 15 mins or until becomes golden. Add cinnamon and a drop of almond essence. Gradually add the syrup, stirring constantly for about 15 more mins. If the semolina becomes dry, add some boiling water and keep stirring until it is a smooth and firm consistency. Transfer to serving dish and flatten top with a wet spoon. Allow to cool. Once cooled, cut with a wet knife into squares. Keep refridgerated and consume within 3 days. Afiyet Olsun Enjoy!
