古早味蛋糕到底可不可以做裝飾蛋糕呢? 口感好不好呢?Taiwanese Castella Decorated Cake 成品 Product:6吋蛋糕 (6 inch cake) 材料 Ingredients: (一) 6吋古早味蛋糕一個 One 6 inch castella cake (二) 內餡 & 裝飾 Filling & Decoration: 鳳梨罐頭 Pineapple Canned 227g 鮮奶油 Whipping Cream (40%) 430g 糖粉 Icing Sugar 43g 水蜜桃色膏 Creamy Peach Icing Color 玫瑰色膏 Rose Icing Color (三) 工具 Tools: 裱花嘴 (直徑 0.7公分) Piping Tip (Diameter 0.7cm) Wilton #12 花形6齒裱花嘴 Large Flower Piping Tip Wilton #2D 裱花嘴 (直徑 0.7公分) Piping Tip (Diameter 0.7cm) Wilton #32 做法: 1.將古早味蛋糕分成三片,鳳梨片水份瀝掉。 2.鮮奶油180克和糖粉18克稍微攪拌一下,用電動攪拌器將鮮奶油打到6-7分發,再繼續手動打發到合適的狀態。 3.蛋糕旋轉台上放上止滑墊,再將紙盤放在上面,之後再挖取一點鮮奶油在紙盤中間並抹開。 4.放上第一片蛋糕片後,挖取一些鮮奶油在蛋糕中間並抹平。蛋糕邊緣,擠上1圈的鮮奶油後,再擺上鳳梨片,之後擠滿一層鮮奶油,最後再蓋上第二片蛋糕片。第二層的內餡,重複第一層的步驟。 5.蓋上第三片蛋糕片後,將整個蛋糕塗滿一層薄薄的鮮奶油,之後放入冰箱冷藏30分鐘。 6.鮮奶油250克和糖粉25克混合一會兒後,加入水蜜桃色膏,再將鮮奶油打到約6-7分發程度,之後將鮮奶油分成兩個部份。 7.第一部份的鮮奶油,繼續手動打到約8-9分發程度,用裱花嘴將蛋糕側邊擠滿一層鮮奶油,然後用抹刀和刮板收整蛋糕表面。如果蛋糕有小洞或瑕疵的地方,可以用鮮奶油填補,最後再用抹刀和刮板收邊蛋糕抹面。 8.第二部份的鮮奶油加入玫瑰色膏,手動將鮮奶油打到約8-9分發程度。用花形裱花嘴,在蛋糕表面擠出花朵造型;用Wilton #32裱花嘴,在蛋糕的上面及下面邊緣做造型。 9.蛋糕做好後,稍微冷藏一下再品嚐喔! 艾莉莎手工藝:  / 159904294358860   Instagram:  / ilisachao
