Using fresh corn cobs to infuse the stock creates incredible flavour, while pantry staples like creamed corn, soy sauce and ginger come together to make a comforting soup that's perfect for busy weeknights or chilly winter evenings. It genuinely means the world to me and helps me continue creating simple, wholesome recipes for you all each week. 👇 FULL RECIPE Chinese Chicken & Corn Soup Ingredients: 3–4 fresh corn cobs 1.5 litres vegetable stock 500 grams chicken tenderloins 1 x 400 gram tin creamed corn 1 tablespoon fresh ginger, finely chopped or grated 2 spring onions, finely sliced (reserve half for serving) 1–2 tablespoons soy sauce 2 eggs, well whisked Method: 1. Place the corn cobs, vegetable stock and chicken tenderloins into a large saucepan. 2. Bring to the boil, then reduce to a gentle simmer and cook for 10–15 minutes, or until the chicken is cooked through. 3. Remove the chicken and corn cobs from the saucepan and allow them to cool slightly. 4. Cut the corn kernels from the cobs and shred the chicken using two forks. 5. Stir the creamed corn, ginger and half of the sliced spring onions into the broth. Return the shredded chicken and fresh corn kernels to the saucepan. Add the soy sauce and simmer gently for another 10–15 minutes. 6. Turn off the heat. Slowly pour in the well-whisked eggs while gently stirring the soup to create silky ribbons of egg. 7. Stir through the remaining spring onions and serve immediately. 💛 Tips -Simmering the chicken and corn cobs together creates a naturally sweet, flavour-packed broth. -Adjust the soy sauce to suit your taste. -Garnish with extra spring onions before serving for added freshness.
