RECIPE: LOUISIANA HOT SAUCE
INGREDIENTS: 1 pound chili peppers chopped (Use gloves and do this in a well ventalated area) 1/2 to 1 teaspoon salt ½-1 cup white wine vinegar *Other vinegars can be used for different results INSTRUCTIONS: Add the chilli peppers, 1 cup vinegar and 1/2-1 teaspoon salt to a pot and bring to a boil. Simmer for 15mins. Let it cool, then blend well. Strain in a fine strainer and/or cheesecloth. Keep the pulp for chilli powder. Let cool further then pour into clean jars. Store in the fridge for 2-4 months. Chilli powder: Spread pulp on a greased pan and bake in the oven at 170C until dry, turning every hour.
