Serving Suggestions: Top your Dal Pakwan with tangy chutney and chopped onions for that authentic Sindhi touch. 👨‍🍳 Ingredients You’ll Need: For Dal: • 300gms chana dal (split chickpeas) • 3 cups water • 2-3 green chilies, slit • 1 teaspoon turmeric powder • 1 teaspoon mustard seeds • 1 teaspoon garam masala • 1 tsp amchur powder • 1/2 tsp Coriander Powder • 1/2 tsp Cumin Powder • Salt, to taste • 1 tablespoon oil • Fresh coriander leaves, chopped (for garnish) For Pakwan: • 200g all-purpose flour • 1 teaspoon cumin seeds • 1/2 teaspoon carom seeds (ajwain) • 1 teaspoon salt • 2 tablespoons oil (for the dough) • Water (as needed to knead the dough) • Oil (for frying) For Tempering • 3 tbsp Ghee • 1 medium onion, finely chopped • 2 small tomato chopped • 1 teaspoon red chili powder • 1 teaspoon cumin seeds • 2 green chili chopped For Garnish: • Tamarind chutney • Green Chutney • Chopped onions • Chopped coriander leaves • Green chilies, chopped Instructions Preparing the Dal: 1. Soak and Cook the Dal: 2. Wash the chana dal thoroughly and soak it in water for at least 3 hours. 3. Drain the water and add the dal to a pressure cooker with 4 cups of fresh water. Add turmeric powder and salt. 4. Pressure cook for about 3-4 whistles or until the dal is soft but not mushy. Set aside. 5. Prepare the Tempering: 6. In a pan, heat 1 tablespoon of ghee over medium heat. 7. Add cumin seeds and mustard seeds. Let them sizzle and pop. 8. Add chopped onions and green chilies. Sauté until the onions turn golden brown. 9. Add red chili powder and garam masala. Stir well. 10. Combine and Simmer: 11. Add the cooked dal to the pan and mix well with the tempering. 12. Let it simmer for 5-10 minutes to allow the flavors to meld together. Adjust the seasoning with salt if needed. 13. Garnish with chopped coriander leaves. Preparing the Pakwan: 1. Make the Dough: 2. In a mixing bowl, combine all-purpose flour, cumin seeds, carom seeds, and salt. 3. Add 2 tablespoons of oil and mix well. 4. Gradually add water and knead into a firm dough. Cover and let it rest for 15-20 minutes. 5. Roll and Fry: 6. Divide the dough into small balls. 7. Roll each ball into a thin circle (like a tortilla) using a rolling pin. 8. Prick the rolled circles all over with a fork to prevent puffing up while frying. 9. Heat oil in a deep frying pan over medium heat. 10. Fry each circle until golden and crisp. Drain on paper towels to remove excess oil. Serving: 1. Serve the hot dal in a bowl. 2. Accompany it with crispy pakwan. 3. Garnish with tamarind chutney, chopped onions, coriander leaves, and green chilies as desired. This recipe brings the traditional taste of Sindhi Dal Pakwan right into your kitchen!
