Sauté onions and garlic in olive oil, add diced bell peppers and minced meat and cook until crumbly. Season with salt, pepper and parsley. Cut the eggplants lengthwise, fill with the minced meat mixture, and top with tomato slices and grated cheese. Mix tomato paste with water, pour over the eggplants and bake for 20-25 minutes at 180°C. Serve with the yogurt-dill sauce. 🍆 VIDEO 2 (from 10:37): Refined eggplant rolls with minced meat & vegetable rice. 📌 RECIPES: Eggplant – 1 large piece Ground beef – 400 g Onions – 2 pieces Garlic – 2 cloves Mushrooms – 6 pieces Red bell pepper – ½ piece Rice – 1 cup Corn – 2 tbsp (cooked) Peas – 2 tbsp (cooked) Olive oil Paprika Salt, black pepper Water – 2 cups 👩🍳 QUICK PREPARATION: Cut the eggplant lengthwise into thin slices, salt, let sit for 10 minutes and pat dry. Brush with olive oil and paprika powder. For the filling, finely chop an onion and garlic, fry with minced meat and chopped mushrooms, season with salt and paprika powder. Spread the filling onto the eggplant slices, roll them up and secure them with toothpicks. Fry the rolls in a pan until golden brown on all sides, then cover and cook for 7 minutes over medium heat. For the rice, dice the second onion, carrot and bell pepper and fry them. Add washed rice, deglaze with water and simmer for 15 minutes.
