In Season 6, we'll be introducing more of Fukushima's tourist spots and gourmet food that we haven't yet shared, under the title "Yumeppe's Top Picks in Fukushima!" Fukushima Prefecture is a major producer of fermented foods such as sake, miso, and soy sauce. Therefore, in Episode 2, we'll focus on fermentation! We'll learn how to make delicious dishes using fermented foods that are easy to prepare at home from Chef Hiromitsu Nozaki, a master of Japanese cuisine and a native of Furudono Town, Fukushima Prefecture. Recipe Featured [Sake Lees Fermented Sauce] Makes your dishes significantly more delicious! (Serves 2) Ingredients 10g chrysanthemum leaves, 40g onion, 40g soy milk, 25g sake lees, 40g white miso, 1g green sansho pepper ① Boil the chrysanthemum leaves and green sansho pepper leaves, then squeeze out the excess water. ② Simmer the onion in soy milk until soft. ③ Put ①, ②, sake lees, and white miso into a food processor and blend. ④ Transfer ③ to a pot and heat over medium heat. Stir with a wooden spatula for about 3 minutes while heating. ⑤ Pour the sauce from ④ over the fried chicken. 【Miso Yogurt Pickles】Easily recreate the taste of fermented rice bran pickles! (Serves 2) Ingredients Your favorite vegetables (cucumber, carrot, yam, etc.), 100g miso, 30g unsweetened yogurt (miso to yogurt in a 3:1 ratio) ① Mix the miso and yogurt well and put into a resealable food storage bag. ② Rub the vegetables with 2% of their total weight in salt, let sit for 10 minutes, then rinse with water. (Imagine scratching the surface of the vegetables with salt.) ③ Wipe the vegetables dry, put them in the pickling mixture from ①, gently massage from the outside of the bag, and refrigerate for about 4 hours. ★The miso yogurt pickle, after one use, can be used as miso for miso soup! The yogurt's acidity is gone, and the fermentation enhances the umami! ★If not used for miso soup, the miso yogurt pickle can be reused up to three times! 【Cold Soup】Using canned goods you have at home! (Serves 4) Ingredients 1 can (70-80g) of canned goods (such as tuna, bonito flakes, or mackerel in brine), 150g tofu, 1 cucumber, a pinch of salt, 4 shiso leaves, 3 myoga ginger, 2 tablespoons toasted sesame seeds, 50g miso, 400cc water ① Slice the cucumber thinly, sprinkle with salt, and once it softens, lightly rub it, quickly rinse with water, and squeeze out the excess water. ② Slice the myoga ginger thinly. Tear the shiso leaves into bite-sized pieces. ③ Combine the miso and water in a bowl. Add the canned goods (including the liquid). Add ingredients ① and ②, and crumble the tofu by hand.
