This time, we visited Shinatoba Sato, a popular restaurant in Kitatamiya, Tokushima City. Both Yu-chan and Amuza ordered the "Shina Soba Nikudai (Large Meat) (1,000 yen including tax)." The moment the bowl arrived, the first thing that caught our eye was the generous portion of sweet and savory braised pork filling the bowl. The volume lived up to the name "Nikudai" (large meat), raising our expectations just from the appearance. The soup is the classic brown color of Tokushima ramen. The richness of the pork bone and the umami of the soy sauce are clearly felt, and while rich, the aftertaste is surprisingly not too heavy. It pairs well with the medium-thin straight noodles, making it so delicious that you can't stop eating. And the meat, which could be considered the star of the show, is thoroughly infused with the sweet and savory seasoning, making it a flavor that makes you want rice. A nice point of ordering Nikudai is that you can enjoy the meat and noodles together until the very last bite. While the 1,000 yen price tag might seem a little steep, considering the amount of meat, the perfection of the soup, and the satisfaction after eating, it's definitely worth it. This is a restaurant I highly recommend for anyone seeking the rich, authentic flavor of Tokushima ramen.
