And today I made my first fresh cheese in the Thermomix. I know many will say, to be a fresh cheese, it must have rennet, that means curdled milk, etc., but regardless of all that. To me, it's a fresh cheese, hahaha. And I'm sharing it with all of you in case you want to make it. I'll leave the recipe below 👇👇👇👇👇👇👇👇 . 📝 INGREDIENTS 📝 . ▪️ 1.5 liters of whole fresh milk. ▪️ 200ml whipping cream ▪️ 1 teaspoon of salt ▪️ 50 ml of white vinegar or the juice of one lemon. (I used vinegar) . . 📍 PREPARATION 📍 . 1️⃣Put the butterfly whisk on, add the milk and cream, and cook for 15 minutes at 90 degrees, speed 2. (I used the same intervals: first, 10 minutes at 90 degrees, speed 2, then another 3 minutes, and then another 3.) Since the fresh milk is cold, it won't reach 90 degrees, which is the right temperature for the milk, in the first 10 minutes. That's why I suggest you cook for 15 minutes at 90 degrees, speed 2.) 2️⃣When the time is up, set the speed 2 for another minute, without temperature, and add the salt and vinegar through the nozzle. 3️⃣Let it sit until the milk has curdled and you can see the yellowish whey. 4️⃣ Using a ladle, slowly pour the milk into the basket, which we'll have placed inside a bowl to collect the remaining whey. Once all the milk has been poured in, use a spoon to mash the curd in the basket to expel all the liquid. Remove the whey from the bowl and save it for use in other recipes. Leave the basket in the bowl for at least 1 hour to expel the liquid. 5️⃣ Pour the cheese into a cheese-making container, or find a Tupperware container and poke holes underneath to allow it to expel any remaining whey. Mash it well with the bottom of a glass. Cover it with its lid or with plastic wrap, as I did. Place it in another container in case it continues to expel liquid during the 12-24 hours it will be refrigerated before serving.
