Chicken in a Mediterranean pan If we want a second course of meat that is easy to cook, fast and very tasty, the Chicken in a pan alla Mediterranea is among the best choices: a quick preparation, a few ingredients always present in our pantries, a nice chicken and we will bring an applause dish to the table! For this recipe I used the Chicken from the Marche Bio Fileni, slow growing and raised outdoors free to scratch, fed exclusively with 100% Italian organic vegetable feed; a chicken with tasty, firm and compact meat. Our chicken, once cut, will brown in a pan initially flavored with garlic and rosemary; then, after blending it with white wine, we will let it cook for half an hour to finally enrich it with the other ingredients that remind us of Mediterranean flavors and aromas: olives, dried tomatoes, capers. The sauce that will form at the end of cooking will be something wonderful and truly succulent, perfect for spreading over the chicken and for dipping a generous slipper at the end! INGREDIENTS 1 FILENI organic chicken from Marche (about 1.5 kg) extra virgin olive oil q.b. 2 cloves of garlic (poached) 1 sprig of rosemary half a glass of white wine 150 g of green olives 150 g of black olives 150 g of dried tomatoes 50 g of desalted capers Salt and Pepper To Taste.
