AÏOLI PROVENÇAL

The great Marseille aioli... An iconic dish from Provence... Here is the list of ingredients to make this family-friendly dish... Serves 4: 800g dried cod (to be desalted) 500g cooked whelks (or to be cooked, but they must be drained and then cooked) Wash all the vegetables in cold water with vinegar. 4 potatoes / 4 carrots 4 hard-boiled eggs 1 cauliflower (in florets) 500g green beans 2 small fennel bulbs, cut in half 2 small purple artichokes, turned and cut in half (remove the hay) Prepare a court-bouillon: 1 liter of water + 25cl of dry white wine 1 carrot, 1 leek, 1 onion, 1 bouquet garni, 5 peppercorns For the sauce: 4 garlic cloves and olive oil... For the garlic mayonnaise: 2 garlic cloves, one egg yolk, and olive oil Mortar and pestle 1 steamer Enjoy!
