千葉県屈指の天ぷら屋!業界の常識をぶち壊す新時代の低温揚げ天ぷら!【天白】【天ぷら⑮】

"I compete with my own skills, not with ingredients. That's why I'm fascinated by the world of tempura." Tenpaku is Chiba Prefecture's leading tempura restaurant. Chef Tsurugai trained at Ginza Tenichi for seven years before going independent. His senior apprentice is Chef Shindome of Niidome. Throwing aside the conservative conventions of the tempura world that have dominated it for 50 years, he is creating new tempura based on his own unique theory. He uses only light sesame oil, as the aroma of sesame can overpower the natural aroma of the ingredients. Contrary to the old image of "tempura = high temperature," he uses a low temperature. According to the chef, the trend of frying at high temperatures was based on an old theory when the oil quality was poor, and there was a risk of losing the flavor, aroma, and texture of the ingredients. He's right: Chef Tsurugai's tempura is fresh and fragrant, fully utilizing the natural flavors of the ingredients.
