The protein can come from various sources, including plant proteins such as soy, wheat, or peas, as well as animal protein sources such as whey powder. It also often contains seeds such as flaxseed or chia seeds, making it rich in fiber. Due to its high protein content, the carbohydrate content in protein bread is very low, usually between five and fifteen percent. This is precisely why it is often used as a low-carb alternative. However, protein bread also has a high fat content, between ten and thirteen percent – ​​according to the North Rhine-Westphalia Consumer Center, this is up to ten times higher than in conventional bread. And it's precisely this fat that also contributes to a higher calorie content, because with 250 to 300 calories per 100 grams, protein bread provides more energy than traditional multigrain bread. Satiety, cravings, and blood sugar – which bread keeps you full longer? Thanks to its high protein content, protein bread is very filling, as proteins are digested more slowly than carbohydrates. The fat content also contributes to the feeling of fullness lasting longer. With crispbread, it depends on the type: Wheat crispbread, with its high content of simple carbohydrates, is digested quickly, so the feeling of fullness doesn't last long. Whole-grain crispbread, with its complex sugars and fiber, on the other hand, ensures longer-lasting satiety. The situation is similar with blood sugar levels. Protein bread generally has a low glycemic index, which prevents strong blood sugar fluctuations and cravings. With crispbread, it again depends on the type. While whole-grain crispbread keeps blood sugar levels relatively stable, wheat crispbread can cause a rapid rise and subsequent drop in blood sugar due to the rapid absorption of carbohydrates.
