Mediterranean Chicken Board Ingredients 2 lbs boneless, skinless chicken thighs 1 cup whole milk ricotta 1 pint cherry tomatoes 1 English cucumber, sliced 1 cup Castelvetrano or Kalamata olives 1 lemon Fresh basil Fresh parsley Extra virgin olive oil Dried oregano Garlic powder Kosher salt Freshly ground black pepper Optional: warm pita or grilled sourdough for serving Directions 1. Season the chicken with olive oil, oregano, garlic powder, salt, pepper, and a squeeze of fresh lemon. Cook until golden brown and fully cooked, then slice. 2. Spread the ricotta onto one side of a large serving board and drizzle with olive oil, lemon zest, cracked pepper, and a pinch of flaky salt. 3. Arrange the sliced chicken, tomatoes, cucumber, olives, and fresh herbs around the ricotta. Finish with another drizzle of olive oil, fresh lemon juice, and serve with warm pita or grilled bread. This is one of my favorite ways to entertain because it's fresh, colorful, packed with protein, and meant to be shared. Enjoy!
