I followed the Wilton Sugar Cookie recipe and their sugar cookie icing recipe which is included in the kit. I doubled the sugar cookies recipe per the instructions and ended up with quite a bit of leftover cookie dough. I also doubled the sugar cookie icing recipe and ended up with leftover. I would still double both though because I don't think that the single recipe will be enough. I made the following changes to the sugar cookie recipe - I had to substitute one cup of coconut flour because I was short on flour for the doubled recipe.
