What I Eat in a Day | Homemade Pho, Fresh Sourdough & Slow Living in Washington Come spend a peaceful day with me in Spokane, Washington. This vlog begins the night before as I prepare overnight oats for breakfast. The next morning starts with a warm cup of coffee, a simple breakfast, and a long day of cooking in the kitchen. While a pot of beef bones slowly simmers for homemade pho, I bake a loaf of sourdough bread that has been proofing overnight and make a comforting ground beef goulash for lunch. Between cooking, Milo and I head outside for a walk among the spring flowers and enjoy some quiet moments in nature. After many hours of simmering, the pho broth is finally ready. We end the day with a warm bowl of homemade pho — one of my favorite comfort foods and a taste of home. Thank you for spending this slow and ordinary day with us.
