Add the sifted flours, salt and vanilla essence, and mix until incorporated. Do not overmix the dough or the cookies will become hard. Chill for at least 30 minutes in the refrigerator. Roll out the dough on a lightly floured surface until it is 0.5 cm thick and make 30 circles with the round cutter. Using the heart cutter, pierce the center of half of the cookies and arrange them all on the baking sheets. Refrigerate for 1 hour. Preheat the oven to 160°C. Remove the dough from the refrigerator and bake for 15–20 minutes. Transfer the cookies to a wire rack and let cool completely. To assemble, place a heaping teaspoon of jam in the center of each whole cookie and top with a hollow cookie.
