Presented by: André Esteves History of Risotto Risotto has been a popular culinary trend for some time now, and it's currently a hit, almost unanimous. Risotto (risotto in Italian) is a dish that originated in northern Italy, more specifically in the Lombardy region. According to some historians, risotto originated in the 11th century, when the Saracens (as Medieval Christians called Arabs and Muslims), who dominated northern Italy until then, brought the grain used to make risotto. The original recipe was created in 1574 at a wedding party. According to some archives, the creator of risotto was Valerius di Fiandra (responsible for creating the stained glass windows in Milan Cathedral), who, in addition to being known for his works of art, also distinguished himself in Italian gastronomy with his exquisite taste. When his daughter decided to get married, Fiandra hosted a dinner for her guests, making one of her signature dishes: risotto. During preparation, Fiandra accidentally dropped a quantity of saffron into the pan, which, according to legend, was a sign of jealousy over her daughter's marriage. Risotto alla Milanese (or Risotto Allo Zafferano) was born. As you know, risotto requires a "special" rice. There are currently several types of rice, among the best known are: Arborio: Larger grains, cheaper, and the most commonly used rice. Ideal for risottos with meat. Carnaroli: Italians' favorite rice because it contains more starch. Although it takes longer to cook, this rice is creamier and has the best al dente consistency. Vialone Nano: Smaller grains, with a more standard shape. Ideal for seafood risottos, or when using smaller ingredients.
