This is Kenta Tsukada from Acid Coffee. YouTube, Episode 11! This time, I'll continue the discussion about the "Colombian Special Process" that I couldn't finish last time because it was too long. I'll also include some of my favorite records in between as we delve into the deep world of flavor. The first cup is "Los Nogales 87% Decaf." This is a special batch where coffee cherry juice is used instead of water in the Swiss Water Process to remove the caffeine. The 87% removal rate, while not reaching the decaf standard (90% or more), leaves an overwhelmingly satisfying taste and fruity notes reminiscent of plum and peach tea. The crispness and nice nutty flavor, and the malic acid that comes to the forefront as it cools, are superb. (※Don't miss the technique for recovering slightly weakly brewed coffee by using the refrigerator to make iced coffee!) I shared my own regional coffee talk, comparing Central and South America to the "Highlands" of whiskey and Africa to "Speyside," and also chatted about the evolution of Indonesia, which is drastically changing from traditional Sumatran methods to modern flavor-making. In between, I recommended four records: UK neo-soul with a Daniel Caesar-esque vibe? Jazz singer Michael Mayo, who makes you want to talk about the beauty of heartbreak songs; city-pop-style Nanako Sato, with an incredibly豪華 lineup of participating musicians; and Art Farmer, arranged by Quincy Jones. For the second cup, I had the "Las Flores Competition Lot Chiroso," which is on a completely different level. By switching between Chiroso cherries and Java and Geisha yeasts, it creates an incredibly complex and information-rich flavor. It burned easily, so we discarded one batch and finished it with "zero crack" instead of using cracking as a criterion. A creamy, milky aftertaste follows the vibrant notes of apricot and passion fruit. This is a "reward" coffee to be enjoyed on its own; it would overpower cake if paired with it. At the time of filming, we had about 8kg left, so we apologize if it's sold out by the time this video is released. We recommend purchasing in 50g to 100g increments. "Coffee that accompanies you every day" and "coffee you drink heartily" are two different things. We will continue to propose coffees while imagining how everyone enjoys it. Don't be bound by textbook numbers. Love the texture from the moment the needle drops, to the moment you see the bottom of the cup!
