DRYING JUICE FROM FROZEN BERRIES FROM THE FREEZER. Thawed berries (e.g., strawberries, raspberries, blueberries, etc.) — any quantity Sugar (optional) — for sweetness (approximately 50-100 g per 1 liter of juice) Remove the berries from the freezer and let them defrost naturally. This can be done by leaving them in the refrigerator overnight or at room temperature. After defrosting, the berries will release their juice. Strain the defrosted berries through cheesecloth or a fine sieve to separate the juice from the berry pulp. Squeeze well to extract as much juice as possible. If you want to make the juice sweeter, add sugar to the strained juice and heat over low heat. Stir until the sugar is completely dissolved, without bringing it to a boil. Sugar may need to be added if the juice is to be used as a base for drinks or desserts. SOLAR DRYING Pour the juice in a thin layer onto flat baking sheets or special drying trays lined with parchment paper. Dry in the sun in a warm, well-ventilated area, checking and turning occasionally. IN A DIGESTOR Pour the filtered juice onto special pastila sheets. Set the temperature to +50...+60... and dry for 6-12 hours, until the juice turns into an elastic film or powder. The juice is ready when it is dry and elastic, but not brittle. If a film has formed, it should easily peel off the surface. ❗️ Transfer the dried juice to airtight containers or bags and store in a dry, dark place. Be careful not to let water get into the packaging, as this can cause mold. ❗️To reconstitute the juice, simply add the powder to water (e.g., 1-2 tablespoons of powder per 1 cup of water) and stir until completely dissolved. The infusion may take 10-15 minutes. Use the reconstituted juice as a base for smoothies or simply as a refreshing drink. Add the dry powder to pancake, muffin, or cookie dough for added berry aroma and flavor. Use as a yogurt seasoning, dessert spread, or salad dressing. Use it to make smoothies or other sauces, adding fresh fruit for added richness. Therefore, dehydrating the juice from thawed berries is a great way to remove excess liquid and create a healthy ingredient that can be used in a variety of dishes. Blend the berries until pureed, then press them through a sieve to remove the seeds and skins. Dry as juice. When reconstituted, you'll get juice with pulp. Or you can use it as a pie filling. It all depends on how much water you add. Or you can eat it as a marshmallow. The berries can be used to make two products.
