If they are piled up, moisture will accumulate inside them, which will cook the berries from the inside, making them dark and unsightly. ❗️IMPORTANT To ensure that raspberries remain ruby-red after drying and don't turn into dry, gray lumps, remember three rules. No high temperatures. Raspberries are delicate, and their limit is 45 degrees Celsius. Any higher, and the color is gone forever. A short soak in boiling water (5-6 seconds!) followed by an ice-cold shower freezes the natural dye inside. Dry in a dehydrator, protected from direct light. Light destroys the raspberry pigment faster than heat.
