Ingredients For the muffins 3 bananas 150g sugar 2 eggs 120ml sunflower oil 60ml milk Vanilla extract Ground cinnamon Nutmeg 1 tsp baking soda 1 tsp baking powder Pinch of salt 250g all-purpose flour 70g chocolate chips For the filling 180g white chocolate 200g heavy cream 180g cream cheese Extra 200g dulce de leche (caramel spread) Unsweetened cocoa powder, as needed Instructions 1. Prepare the batter Place the flour, salt, baking powder, baking soda, cinnamon, and nutmeg in a bowl. Mix the dry ingredients. In another bowl, mix the eggs, sugar, oil, and mashed bananas. Add the vanilla extract. Pour the wet mixture over the dry ingredients. Combine the batter without overmixing. Add the chocolate chips. 2. Bake the muffins Distribute the batter into muffin tins lined with paper liners, filling them generously. Bake in a preheated oven at 180°C (350°F) for 15 to 20 minutes. Let cool. 3. Prepare the cream Melt the white chocolate together with the heavy cream. Add the cream cheese. Let cool completely. Whip until stiff peaks form. Place in a piping bag. 4. Fill and decorate Fill the muffins with dulce de leche. Decorate with the white chocolate cream. Finish by dusting with unsweetened cocoa powder.
