Open Fire Cooking Hack: Cheesy Khachapuri on a DIY Saj Stand

Making authentic Ossetian Khachapuri over an open fire is an art, and today I’m sharing my favorite recipe! To get that perfect crust and melted cheese, I’m using a custom Multi-Purpose Foldable Saj Stand I built specifically for outdoor cooking. Watch the video all the way through to see how this cheese bread packs a punch. 👇 Tell us in the comments: Would you try baking this cheese bread in a dry skillet over an open flame? 👍 Like | 💬 Leave a comment | 🔔 Subscribe so you don’t miss out on new culinary experiments Ossetian Cheese Pie (Khachapuri) with Two Cheeses Ingredients For the dough 500 g (17.6 oz) all-purpose flour 300 ml (10 fl oz) warm water 7 g (¼ oz) active dry yeast 1 tsp sugar 1 tsp salt 2 tbsp vegetable oil For the filling 300 g (10.6 oz) mozzarella, shredded 300 g (10.6 oz) feta cheese, crumbled 1 egg (optional, for binding) For finishing 1 tbsp butter, melted Instructions Mix warm water, yeast, and sugar. Let stand for 5 minutes. Add flour, salt, and oil. Knead until smooth, about 8–10 minutes. Cover and let rise until doubled, about 1 hour. Combine mozzarella and feta (add the egg if desired). Place the cheese filling in the center and bring the edges together to seal. or baking stone at about 450°F (230°C) until golden brown, 8–12 minutes. Brush with melted butter and serve hot.
