We try three bottles: 65 Miles Gin, a bold 57% navy strength gin; Two Pencils Gin, a classic London dry gin made only with juniper berries; and Greenhouse Gin, a lighter, floral gin with cucumber, citrus and rosehip notes. First, we taste all three neat to explore their aromas, flavors and individual character. Then we make gin and sodas with each one and pair them with bar snacks such as pickles, olives, mixed nuts and Hapankorppu, a Finnish crispbread. Gin is not only for gin and tonics.
