Brazo de Reina o Brazo Gitano Buche de Noel

The Yule Log, or Buche de Noel, is the quintessential Christmas cake. Its origins—the log, not the cake—date back to pre-Medieval times. At the solstice, people would burn a log in their fireplace to ward off evil spirits throughout the year and to celebrate the fact that the days were finally getting longer, eventually ushering in the long-awaited spring. The Yule Log cake does indeed resemble a tree trunk with a base of genoise sponge cake filled with cream and adorned with frosting and a few mushrooms, as if it had been cut from the forest. It can be made in different flavors and even filled with ice cream. Our version is a vanilla sponge cake filled with a chocolate pastry cream* (see our tutorial) and topped with a rich, thick whipped ganache frosting** (see our tutorial). Making this Buche de Noel isn't difficult, but you do need to have several things prepared in advance: the filling and the frosting. Chocolate Custard Filling –    • Crema Pastelera de Chocolate   Whipped Ganache Frosting –    • Ganache de Chocolate y Frosting de Trufa   Ingredients: – Genoise sponge cake • 1 cup minus 1 teaspoon – 120 g flour • 3/4 cup minus 1 tablespoon – 120 g sugar • 4 large or 5 small eggs, separated into whites and yolks • Pinch of salt • Optional: pinch of cream of tartar Preparation: • Beat the egg whites with a pinch of salt and, optionally, a pinch of cream of tartar. • Beat the egg yolks with the sugar at maximum speed for 5 minutes. • Fold the egg whites into the yolks. • Add the sifted flour little by little and fold it in with a spatula. • Grease a rectangular baking pan with butter or margarine and line it with baking paper or similar. • Spread the prepared mixture, smoothing it with a spatula until it is half a centimeter thick. • Bake in a preheated oven at 180°C (340°F) • Remove from the oven and remove the paper, spreading it on baking paper sprinkled with sugar. • Roll it up using baking paper or a damp cloth to form an arm shape. Let it cool, then unroll it to add the filling. • Roll it up again. Cool. • Garnish with whipped ganache – watch video. Please Share! Thank you very much.
