Blueberry Cobbler Cake 3 cups blueberries 1/2 teaspoon lemon zest lemon juice, from half a lemon, to coat blueberries 1 1/4 cups sugar, divided 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1 stick butter, melted 1 teaspoon vanilla extract 1 cup milk Preheat oven to 400°. In a large bowl add blueberries, lemon zest and lemon juice. Gently stir so that the juice coats the blueberries. Toss the blueberries in 1/4 cup of sugar. Set aside. In a large bowl, whisk together the flour, baking powder, salt, and the remaining sugar. Add butter, milk, and vanilla extract. Stir gently just until flour is combined. The batter will be a bit lumpy. Pour batter into an 8” X 8” baking dish prepared with nonstick spray. Spoon the blueberries in a single layer on top of the batter. Do not stir the blueberries into the batter. Shake the dish gently so that the blueberries settle into the batter just slightly. Bake for 35 to 40 minutes until the middle is set. Take care not to overbake. CONTACT INFORMATION: Come Sit At My Table P.O. Box 1041 Mt.
