In this video, I'll show you how to make a thin, crispy pastry filled with the classic Messina filling: curly endive, fresh tuma cheese, anchovies, and pepper. š A pinch of history Pitone is more than just a fried calzone. Its name seems to derive from its "half-moon" shape, vaguely reminiscent of a bag, or, according to some popular traditions, from the dialect term for a humble but substantial wrapper. Born as a leftover dish in the alleys of Messina, it was prepared by less wealthy families with what the land offered (escarole) and the typical products of shepherds (tuma). Although it's now available year-round in every deli, the connection to Carnival is visceral: it's the perfect comfort food to celebrate joyfully before the Lenten fast!
